Royal Icing Recipe – Egg Free and Dairy Free
Here’s a vegan royal icing recipe which is dairy free, egg free, gluten free, soy free and vegan! We use it to decorate cookies. I separate the icing into a few bowls and color the batches with natural food coloring. Then I put some into the corner of a snack size zip top plastic bag (that’s what’s pictured), and snip off a tiny part of the corner. My kids squeeze those bags to decorate our allergy free cookies. I personally don’t like artificial food flavorings, but they work in this recipe if you like them. Using real vanilla extract will make the icing slightly brownish, so use imitation vanilla if you want vanilla flavor but want the icing to stay pure white. Imitation butter flavor is all artificial, so it’s generally safe for people with milk allergies. However, check with the manufacturer to be sure. This doesn’t dry out as fast as royal icing made with eggs, but you may want to keep the bowl covered while using it. The icing hardens up nicely overnight so you can stack the cookies and don’t have to worry about smearing your lovely decorations. Happy cookie decorating!
Vegan Royal Icing Recipe
1 c. powdered sugar
1 to 2 T. water, or rice milk
2 tsp. light corn syrup
1/4 tsp. clear vanilla flavor or imitation butter flavor, optional
Food coloring – gel, paste or powder, optional
In a small bowl, combine sugar and 1 tablespoon of water or milk. Add more liquid if needed to make the mixture smooth, but you don’t want it to be runny at this point.
Add corn syrup and flavoring, if desired. Stir with a small spatula until the mixture is smooth and glossy. If it is too thick, add a little more corn syrup until it reaches your desired consistency.
If you want to color this vegan royal icing, divide it into bowls and color away! Place into piping bags or plastic zip top bags for decorating. This makes a small amount of royal icing, so double or triple the recipe if you have a lot of cookies to decorate.
