Recipe for Powdered Egg Substitute – Vegan, Dairy Free, Gluten Free, Flaxseed Free
Replacing eggs in baking can be done in a number of ways. A lot of egg-free recipes call for “flax eggs,” which are made with flax seed. I’m sensitive to flax seed so I can’t use those. Fruit puree (applesauce or prune puree) can be used to replace eggs in certain types of recipes, like sweet quick breads or brownies. But fruit puree can’t be used to replace eggs in everything because you can taste the flavor of the fruit in the finished product, and the fruit does not replace the leavening action of the eggs. Powdered egg substitute (or “egg replacer”) products sold in stores contain tapioca starch, which also bothers me. Boo. Thankfully, I found some information online which I modified to create my own powdered egg substitute recipe. I never refrigerate this and it hasn’t gone bad on me, so I think it is safe to keep in the pantry. I’ve never tried it in a recipe that calls for more than two eggs, and don’t think that would work for many egg substitutes. It works wonderfully otherwise. This egg substitute is vegan, dairy free, nut free, flax seed free, soy free and gluten free. Try it in my Gluten Free Drop Biscuits!
Powdered Egg Substitute Recipe
1+1/4 cup arrowroot powder
1/4 cup non-aluminum baking powder
1/2 T. xanthan gum
Mix ingredients together and store in a small glass container. Add a label that reminds you how to create the egg substitute, as follows:
To substitute for one egg, whisk 1+1/2 tsp. powder with 2 T. water.
Make sure you whisk the mixture thoroughly and let it sit for a minute or two before adding to the recipe. Happy baking!
